I had a big trip to the post office yesterday and then we had an appointment but I got to do some quilting in the afternoon. I hope today to get the other quilt done and maybe get another loaded. Since we got the downstairs AC fixed I could finally turn on the oven and bake some bread. I have to eat gluten free but this recipe is about as good as it gets. YOu aren't supposed to touch gluten free bread until it cools down but I couldn't help it and I was able to get a photo with the bread still steamy.

My husband has celiac. I don't often even keep gluten flour in the house. I have never found a good GF bread recipe that tastes good after the initial cool off. I have made almond flour bread that tastes good just made but then is too dense tasting for me although my husband thinks its fine. It toasts good. If you are willing to share the recipe, I will give it a try. I need to follow low sodium so I normally make my own bread and lots of other things so I can keep track and keep it at or under the doctor's recommendation - I bake, let it cool, slice it and bag it and stick in the freezer and take out what I want when I want it and thaw then

I don't have to eat gluten free but I do eat without grains, potatoes or sugar. It is a ketogenic diet that keeps my diabetes in remission without medicine.
